Grand Cru Classe Located on the western side of the Saint- Emilion, on the edge of the Pomerol appellation, the property takes its name from the Caribbean island where the owner at that time made his fortune. It features in the first editions of "Bordeaux and its Wines". Its hectare vineyards consist of 25% of deep gravel and 75% of gravely ancient sands on a clay sub-layer. The works in the vineyards and in the cellars are accomplished with the permanent concern to respect and to express the high class quality of this exceptional terroir. The harvest takes benefit of a double sorting. The grapes are then driven on a conveyor in the tanks. The valroom is composed of 22 stainless steel vats of small capacity - 60 to 100 hectoliters - to achieve a work totally per parcel. After 15 to 18 months of ageing, the final blend is agreed, then the wine is fined with white eggs before bottling. Wines at Chateau La Dominique harmoniously combine a lavish fruit, a long and full-bodied structure, Per 75cl Bottle. Lovely exotic nose, plenty of plummy fruit and exotic spices. Decanted about two hours. Rich fruit, more plum than black. Dark chocolate, warm spices like cinnamon and nutmeg.Soft fine tannins. Hedonistic. Maybe lacking a bit of length and complexity but a very pleasurable drink. (69 views) |
